
I have discovered a recipe that is worth killing pigs for, the P90x Island Pork Tenderloin Recipe.
If you cut out the dressing you can lower the fat content from 13g to a little more than 6 grams.
You can also serve the Pork Tenderloin with rice as a different option. Whatever you do, don't cut out the brown sugar, it is what makes this dish out of this world. I would definitely reward myself with this meal on a weekend, after a hard week of exercising, and you have some time to prepare it (it looks a lot more complicated than it actually is).

Ingredients
16 oz pork tenderloin, lean
0.5 tsp salt
0.4 tsp pepper
0.5 tsp chile powder
0.5 tsp ground cumin
0.5 tsp cinnamon
2 tsp olive oil
0.25 c brown sugar packed
0.5 T fresh garlic, finely chopped
0.5 T tabasco sauce
Directions
1. Preheat oven to 350 degrees.
2. Stir together salt, pepper, cumin, chile powder, and cinnamon, then coat pork with the spice rub.
3. Heat 1 T oil in a 12-inch skillet over moderately high heat and brown pork, turning about 4 minutes
4. Stir together brown sugar, garlic, and Tabasco and pat onto top of tenderloin. Place pork in roasting pan and cook in the oven for 20 minutes.

The Salad:
For one salad:
1/2 orange, peeled and cut
1 cup fresh spinach
1/2 red bell pepper, cut lengthwise into thin strips
1 tablespoon golden raisins
1 cup Napa cabbage, shredded
6 ounces Island Pork Tenderloin
2 tablespoons cumin vinaigrette (see below)
Peel and cut oranges crosswise into 1/4 inch thick slices and set aside.
Toss spinach, cabbage, bell pepper, and raisins in a large bowl.
Prepare the dressing (below)
Mound salad mixture on a large plate. Arrange pork and orange slices on top and drizzle with dressing.

The Dressing:
2 tablespoons fresh lime juice
1/2 tablespoon orange juice
1/2 tablespoon dijon mustard
1/2 teaspoon cumin powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
Serves 2.
Whisk together until emulsified.
